I agree wholeheartedly about these being the best kitchen knife set. I currently have 4; 7″ santoku, the bread knife, serrated utility knife and the pearing knife. Have so far used the bread knife and the santoku. Both are incredibly sharp, sharp enough that you can cut wafer thin slices. The santoku goes through raw potatoes like a bread knife through butter. The serrated bread knife went through a cooked ham like it was butter also. They are expensive, but if taken care of will last a lifetime. The blades are 2mm thick and have an 80/20 angle which makes them razor sharp. If there’s any disadvantage to them it’s that the blades are a little too delicate to slice through heavy fruits such as a watermelon or a butternut squash. But I have a Wusthof for cutting the heavy duty things. Not that beauty matters but they are absolutely gorgeous. They also are perfectly balanced. if you pinch the knife with two fingers just above the tang it stays perfectly level. They are also light enough that you won’t become fatigued when using them for long periods of time. Plan on adding more at some point but not sure what else to get. If you try one you will be hooked for life and will never want to go back to a duller knife again.
Can you tell me anything about cutco. I had a demo and really like the knifes. Currently I have a Henkels chef knife (I use this for everything). I have a Henkels Carving Knife (I never use this because it is flimsy) Henkels Serrated Paring Knife(I use this often) The Cutco Knives seem to cut with less effort then my Henkels. Any opinion on Cutco
